Lentil Soup with Lemon and Turmeric

Ingredients:

  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon fresh ground black pepper
  • 1/2 teaspoon ground turmeric
  • 2 cups (12 ounces) lentils, picked and rinsed
  • 8 cups chicken or vegetable broth
  • 2 heaping cups shredded kale or spinach
  • 1 to 2 lemons
  • 1/4 cup chopped fresh herbs like parsley or dill, optional
  • Fine sea salt, to taste
Instruction: 
  1. The first step is to heat the oil in a large saucepan (like a Dutch oven) on medium heat. then next, add carrots, onions and 1/4 teaspoon of salt and cook, stirring occasionally until softened until it starts to smell sweet. for about 5 to 7 minutes. then stir the garlic, coriander, cumin, black pepper, and turmeric and cook for about 30 seconds.
  2. the next step is to stir the broth and lentils. add heat then bring to a boil. don't forget to taste to adjust to your taste level (we add between 1/2 teaspoons depending on how well the broth is seasoned). then reduce the heat to a boil and cook, partially cover, until the lentils are tender, about 35 to 40 minutes.
