This soup is perfect for kids who don't like kale and cauliflower. because in this soup the vegetables will be cut very thin so that it doesn't look anymore that it's spinach vegetables. if the cream is added with cashews, it will make this soup add to the delicious and delicious taste.

Ingredients:
- 1 onion, chopped
- 4 cloves garlic, minced or pressed
- 4 medium carrots, chopped small
- 1 cup celery, chopped
- 1 lb frozen (or fresh) cauliflower florets
- 6 cups vegetable broth
- 3 small cups chopped kale
- 3/4 cup raw cashews, soaked in hot water for 5 minutes
- salt, to taste
Instructions:
- In a large soup pot, sauté the chopped onion in a few tablespoons of water or vegetable broth for 3-5 minutes, until transparent.Add the garlic, carrots, celery and sauté a few minutes more. Next add the cauliflower and vegetable broth. then simmer and cook for 10-15 minutes.
- Add cashews and 1 cup of the soup into a blender. Blend until smooth and add back to the soup pot.
