Hello culinary lovers! Meet again with Quina. This time Quina will share meatball recipes you know. Meatballs are Indonesian specialties made from beef, chicken or fish which are formed in a round shape and then served with soup noodles.

Well, it's different from the meatballs we usually eat. In this recipe the meatballs will be served accompanied by Zucchini. The round shaped meatballs are placed inside the previously cleaned Zucchini. Then, the meatballs are smeared with sauce and various topings that have been prepared. After that, then bake it in the oven until cooked. Savory texture, spicy and sweet blend of topping that is given to the meatballs blend with the soft texture of the zucchini that has been roasted making this food very dear to miss. This food is perfect to be enjoyed during the day and accompanied by cold drinks. How are you guys? This food is very tasty and of course you know guys. The ingredients and how to make it are below. INGREDIENTS:

  • 3 -4 medium zucchini, halved lengthwise
  • 1 tbsp. extra-virgin olive oil
  • 1/2 tsp. Italian seasoning
  • 1/2 tsp. garlic powder
  • Kosher salt
  • Freshly ground black pepper
  • 1 lb. ground beef
  • 1/4 c. freshly chopped parsley, plus more for garnish
  • 1 large egg
  • 2 garlic cloves, minced
  • 1/2 tsp. crushed red pepper flakes
  • 1 tbsp. vegetable oil
  • 2 c. marinara sauce (use sugar-free if you're keto!)
  • 1 c. shredded mozzarella
  • 1/2 c. freshly grated Parmesan

DIRECTIONS:

  1. Preheat oven to 350°. Zucchini score (like you dip the avocado in) then poke the inside like a large bowl. Place in a shallow baking dish, drizzle with olive oil, and season with Italian seasoning, garlic powder, salt, and pepper. Bake 12 to 15 minutes, until mostly tender. Remove from oven and turn broiler to high.
