Ingredients
  • 4 ears  corn husked and cleaned
  • 1/4 cup  diced red onion
  • 1/2  avocado diced (more if desired)
  • 1/2  jalapeno minced 
  • 1/4 cup  Cilantro minced
  • 2 tablespoons  lime juice
  • 1 tablespoons  olive oil
  • 1/2 teaspoons  chili powder
  • 1/2 teaspoon  smoked paprika
  • 1/2 teaspoon  garlic powder
  • 1/2 teaspoon  cumin
  • 1/2 teaspoon  salt
  • 1/2 teaspoon  freshly ground black pepper
  •  cotija or feta which has been destroyed for the topping later

Instructions
  1. Preheat the oven to 450 degrees. wrap each piece of corn onto a sheet of foil
  2. Corn is roasted for about 20-30 minutes.
  3. Let sit for about 5 minutes to cool slightly.
