Ingredients
  • 6 slices of bacon chopped
  • 1 small yellow onion diced
  • 3 cloves of garlic minced
  • 3 tablespoons all purpose flour
  • 4 cups chicken broth (unsalted)
  • 1 cup milk (of choice)
  • 1 cup cream or half and half
  • 3 pounds of potatoes peeled 
  • 1 and 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/3 cup sour cream
  • 1 cup shredded sharp cheddar cheese

Optional Toppings:
  • diced green onion
  • diced bacon
  • shredded cheese
  • sour cream

Instructions
  1. Add the bacon to a large dutch oven or pot and cook over medium high heat until the bacon is crispy. Drain the meat on a plate and cover it with tissue
  2. Add the diced onion and cook until softened and translucent. Enter the chopped garlic, cook until fragrant
  3. Next stir the flour until a paste is formed and wait until it's cooked about 2-3 minutes in golden color. This cooks the flour.
